    If the items are shipped separately so that their costs are independent, give each item a units value equal to its shipping charge and use option 3 with a cost per unit of 1.

    If the shipping charge is to be calculated on the total weight then you give each product a units value equal to its weight, and set up tables (or with advanced shipping use a provided calculator such as UPS) reflecting your charges.

    That would be Option 7 if using standard shipping - but it only offers five different charges.
    You could use option 5 where the COST column has multipliers and charge by the pound or part thereof.
